Tabbouleh Salad

Ingredients:

  • 225g/8oz Bulgar wheat
  • 3 tablespoons fresh parsley, chopped
  • 3 tablespoons fresh mint, chopped
  • 125g/4½oz cherry tomatoes, quartered
  • ½ cucumber, finely chopped
  • 1 bunch spring onions, finely sliced
  • grated lemon rind and juice
  • 2 tablespoons olive oil
  • freshly ground black pepper

Method:

Place the bulgar wheat in a bowl and cover with boiling water, leave to soak for 15-20 minutes or until the grains are tender, drain off any remaining liquid.

Mix together all the remaining ingredients and toss through the bulgar wheat, season well and serve.
