Pizza Style Cod Fillets

Low fat

A quick and easy recipe which will make people think differently about the way they eat and focuses on one or more of the following:

Achieving ‘five a day’; Using seasonal local ingredients; Trying something ordinarily not considered; Low in calories; Low in fat; High in energy; Substituting something which is ordinarily high calorie/fat with something healthier.

Good for:

Loads of protein, all dressed up in a tasty, pizza style topping!

Ingredients:

4 x 100g (3½ oz) cod fillets
225g (8oz) canned chopped tomatoes
2 tablespoons tomato puree
50g (1¾oz) pitted black olives, halved
2 tablespoons fresh basil, torn
25g (1oz) freshly grated Parmesan
Freshly ground pepper

Method:

Preheat the oven to Gas Mark 5 /190 degrees
Rinse the cod steaks and pat dry with absorbent kitchen paper.
Line a roasting tin with non-stick baking parchment and place the fish steaks in the tin.
Mix together the chopped tomatoes, tomato puree, olives, basil and seasoning and spread equal amounts over each cod steak.
Sprinkle over the Parmesan over the top and bake for 20 to 25 minutes, until the fish is cooked through and the cheese has melted.
Serve with a salad and crusty bread.
