Method: | Heat the oil in a pan and cook the onion, garlic, carrot, peppers and mushrooms for 5 minutes. Stir in the apple and chili powder and cook for a further 2 minutes. Stir in the tomatoes and mixed beans. Cover and simmer for 20 minutes then remove the lid and cook for a further 10 minutes to reduce the liquid, increasing the heat if required. Season to taste and serve hot. Garnish with chopped parsley. |
