Microwave Pineapple Sponge Cake

A quick and easy recipe which will make people think differently about the way they eat and focuses on one or more of the following:

Achieving ‘five a day’; Using seasonal local ingredients; Trying something ordinarily not considered; Low in calories; Low in fat; High in energy; Substituting something which is ordinarily high calorie/fat with something healthier.

Good for:

A fruity treat which is as easy as pie to cook... in the microwave!

Ingredients:

1 teaspoon sunflower oil
1 tablespoon golden syrup
125g/5oz tinned pineapple, chunked
125g/5oz caster sugar
125g/5oz soft margarine
2 medium eggs, beaten
125g/5oz self raising flour, sieved
1 tablespoon of warm water

Method:

Grease a basin with the oil.

Pour the syrup into the base of the bowl.

Lay the pineapple on top.

Cream the sugar and margarine until light and fluffy.

Add the beaten egg slowly to incorporate.

Gradually fold in the flour, adding the water to make a dropping consistency.

Transfer the mixture into the bowl on top of the pineapple.

Cover with a piece of cling film and cook in the microwave for approx. 5 minutes then leave to stand for 2 minutes before serving.
