Lightly fry the spring onions in olive oil and add breadcrumb/herb mixture, mustard and lime zest. Combine together. Brush chicken breasts with beaten egg and season. Cover the top of each breast with the breadcrumb mixture and season. Place chicken on lightly oiled baking sheet and bake for 30 minutes at 200˚C.
