Herb Crusted Chicken

Low in fat

A quick and easy recipe which will make people think differently about the way they eat and focuses on one or more of the following:

Achieving ‘five a day’; Using seasonal local ingredients; Trying something ordinarily not considered; Low in calories; Low in fat; High in energy; Substituting something which is ordinarily high calorie/fat with something healthier.

Ingredients:


3 chicken breasts
40g spring onions finely sliced
175g white bread
Zest of 1 lime
2tsps Dijon mustard
1 egg, lightly beaten
1tbsp olive oil
1tbsp fresh mint
1 tbsp fresh parsley
1 tbsp fresh basil
1 tbsp fresh coriander
Salt and pepper 

Method:


Whiz bread and herbs together in food processor.

Lightly fry the spring onions in olive oil and add breadcrumb/herb mixture, mustard and lime zest. Combine together.

Brush chicken breasts with beaten egg and season. Cover the top of each breast with the breadcrumb mixture and season.

Place chicken on lightly oiled baking sheet and bake for 30 minutes at 200˚C.
