Fresh Fruit Salad

5 a day

A quick and easy recipe which will make people think differently about the way they eat and focuses on one or more of the following:

Achieving ‘five a day’; Using seasonal local ingredients; Trying something ordinarily not considered; Low in calories; Low in fat; High in energy; Substituting something which is ordinarily high calorie/fat with something healthier.

Good for:

 A fresh refreshing dessert that helps considerably to achieve your five a day!

Ingredients:

1 melon
1 pineapple
2 oranges
4 oz grapes
2 limes
2 tablespoons of runny honey

Method:

 

Put the melon on a chopping board and carefully cut it in half.  Scoop the seeds out with a spoon and cut melon into  wedges.  Using the spoon, scoop the melon away from the skin, cut it into cubes and put into the serving bowl.

Remove the top and the prickly skin from the pineapple, cut into cubes and add to the bowl.

Peel and segment the oranges and cut into pieces adding to the bowl.

Half the grapes and add to bowl.

Finely grate the rind from the lime and then cut in half and add both the juice and rind to bowl.

Add honey and mix thoroughly.
