Curried Chicken Kebabs

A quick and easy recipe which will make people think differently about the way they eat and focuses on one or more of the following:

Achieving ‘five a day’; Using seasonal local ingredients; Trying something ordinarily not considered; Low in calories; Low in fat; High in energy; Substituting something which is ordinarily high calorie/fat with something healthier.

Tasty, low fat and counting towards your 5-a-day... What more could you want!

Ingredients:

2 chicken breasts
1 red pepper
1 green pepper
around 20 cherry tomatoes
2 onions
1 spoon oil
2 tablespoons curry powder
2 cloves garlic, crushed and chopped fine (optional)
seasoning to taste (e.g., pepper, paprika, cumin, cayenne pepper)

Method:

Cut the chicken into bite size chunks.

Pour the oil into a bowl and add the curry powder, garlic and seasoning. Add the chicken and leave to marinate for as long as you can before you make the kebabs. Half an hour is a good time.

Cut up the peppers and onions into chunks about the size of a 50p piece.

Thread the chicken, peppers, tomatoes and onions alternatively onto kebab skewers.

Grill under a medium heat for approximately 15 minutes, turning occasionally until cooked through. Alternatively cook on a BBQ when the weather warms up!
