Cous Cous & Grilled Sausage

A quick and easy recipe which will make people think differently about the way they eat and focuses on one or more of the following:

Achieving ‘five a day’; Using seasonal local ingredients; Trying something ordinarily not considered; Low in calories; Low in fat; High in energy; Substituting something which is ordinarily high calorie/fat with something healthier.

Good for:

A healthier way of cooking sausages and a low calorie side dish if made in smaller portions. 

Cooking time:

 15 Minutes

Portions:

 4 as a main meal

Ingredients:

500g 1lb extra lean sausages
125g 4oz cous cous
25g 1oz sultanas
200ml 7 fl oz boiling water
50g 2oz green beans
50g 2oz frozen peas
1 red or orange pepper
2 tomatoes
½ orange
1 garlic clove
2 tablespoons of olive oil
Pepper

Method:

Cook the sausages either under the grill or in the oven until cooked through.

Meanwhile, Put the cous cous, peas and sultanas into a large bowl. Pour over the boiling water and leave to soak for 5 minutes.

On the chopping board, cut the green beans and peppers into pieces.
Chop the tomatoes. Squeeze the juice from the orange. Crush the garlic.

Stir the vegetables, juice, garlic, oil and a little pepper into the cous cous and mix together well.

Spoon onto the plates and top with the sausages.
