Country Fresh Soup

A quick and easy recipe which will make people think differently about the way they eat and focuses on one or more of the following:

Achieving ‘five a day’; Using seasonal local ingredients; Trying something ordinarily not considered; Low in calories; Low in fat; High in energy; Substituting something which is ordinarily high calorie/fat with something healthier.

Good for:

5 a day, low in fat, low cost and very tasty.  Freezes well to eat at a later date

Ingredients:

  • 1 cup lentils (red), washed
  • 2 pints vegetable stock
  • 2 onions, diced
  • 2 carrots, diced
  • 1 stick celery, diced
  • 2 large tomatoes, diced
  • 1 large potato, diced
  • 1 tablespoon medium oatmeal
  • Seasoning
  • Mixed chopped herbs

Method:

Place the diced vegetables, oatmeal, washed lentils and seasoning in a saucepan.

Add the vegetable stock, bring to the boil and simmer for 30 minutes.

Liquidise then if desired.

Garnish with chopped herbs.
