Butter Bean, Tomato & Red Onion Salad

A quick and easy recipe which will make people think differently about the way they eat and focuses on one or more of the following:

Achieving ‘five a day’; Using seasonal local ingredients; Trying something ordinarily not considered; Low in calories; Low in fat; High in energy; Substituting something which is ordinarily high calorie/fat with something healthier.

Portions:

 Serves four as a side dish

Cost per person:

Ingredients:

 
1 can of butter beans (rinsed and drained)
2 plum tomatoes (roughly chopped)
½ red onion (finely sliced)
3 tablespoons  herb infused oil
black pepper to taste

Method:

Mix together the beans, tomatoes and onion in a large bowl.

Season with black pepper.

Cover and chill before serving.
